There are two parts to select boxes in EPrints workflows, the label and the value.  The label you can see displayed in your screenshot (e.g. Text, Slideshow, Image, etc.).  These are set using phrases.  Specifically ones that start "document_typename_".  If you just want to change what is displayed then you can edit, in the case of "Text" the phrase document_typename_text in your "Phrase Editor" (under the "Config. Tools" tab on the Admin page). 

However, if you want to add extra options or don't want the value saved as "text", (even if it will be displayed as something else because this may cause future confusion), you will need to edit EPRINTS_PATH/lib/namedsets/document, (it is best not to edit this file directly but copy it to your archive's cfg/namedsets/ directory and edit the copy there), and add the new values you want there.  You will need to add the new phrases required by these extra options.  You can either edit your archive's cfg/lang/en/phrases/local.xml from the command line or you the Phrase Editor in your repository's web interface to add these new phrases.  If you added the new upload type value 'database', then the new phrase would need to be  document_typename_database.
